For those of you who are new this week, you may have noticed that I posted a blog for One Fat Frog about how to make spirit-based infusions where you let fruits, spices, and other products soak in a spirit, like vodka, to create a brand new flavor. Well, I said I would give you an idea of how long the flavors had to sit before the full infusion was done, and I see no reason to make you wait any longer, so here we go!

You’ll notice that the more intense of flavor that is offered by something, the less time it needs to sit, so follow along:

-If you want to infuse your vodka with hot peppers, it should only take one to two hours, but be careful as some peppers will let their flavor go much faster than others. Check this one regularly!

-Intense flavors like citrus fruits (oranges, limes, lemons, grapefruit, etc.) will only need about three to four days to sit. This also goes for things like basil, mint, and vanilla beans.

-Your more moderate flavors, including things like strawberries, blueberries, blackberries, and peaches (didn’t see that coming, did you?), will take about a week to infuse with your vodka.

-Finally, you can infuse super mild tasting items like pineapple and ginger, but that will take about two weeks.

Also, a reminder: you need to have some kind of air-tight container. Mason jars work well if you are only doing small amounts, but if you want to shoot for the moon, get some large fish-bowl-type containers that have rubber-sealed tops and clasps. Then you can make lots of awesome infusions. Also, those aren’t the only flavors out there. Infusions are all about having fun combining flavors, so feel free to experiment!
