Restaurant hoods are attached to the ceiling of restaurant’s kitchens. They’re placed above hot cooking surfaces that produce hot air and smoke that need to be vented out. Restaurants that don’t perform and hot cooking, such as cafes and sub shops, do not require hoods. Pretty much every other kind of restaurant does.
Typically, a restaurant hood will have a fire suppression system built in, which is pretty terrific when you think about it. These systems, such as an Ansel system, will spray fire retardant material onto the cooking surfaces if the hood detects a fire. These fire suppression systems can also be activated manually. Normally, your restaurant will not be able to purchase fire insurance without the proper hood and fire suppression system. Also, the insurance company will most likely not pay out if your fire suppression system is out of date or has not passed inspection. Most locations have a minimum of one fire inspection per year. During these tests the pressure and level of fire suppressant is examined.
It’s essential that hood systems be regularly cleaned thoroughly. There are companies out there who specialize in cleaning hoods and selling cleaning equipment. These companies will clean the ducts and vent systems, not just the hood’s surface and filters.
