So when you work for a company called One Fat Frog that happens to sell used restaurant equipment, you have to imagine that we know a thing or two about restaurants. Well, in fact, some of us used to work in restaurants, so when we say things about keeping the place clean and whatnot, we kinda know what we’re talking about. When you’re cleaning your restaurant, you know to clean dishes and glasses, wipe down table tops (unless you have table cloths, which would mean you need to wash the table cloths) and make sure all of your equipment is tidy. But below we have a list of items that need to be cleaned in your restaurant that you might not think about:

-Work mats: when you’re standing for long hours, rubber mats are placed on the floor to alleviate some of the pain. Bars also use them because there is less of a chance of slipping if a drink is spilled. But these things can get funky if you don’t wash them down after every shift. The good news is they’re easy to clean; often times you just need to take them out back and spray them down with a hose.

-Under equipment: if you’ve got equipment that just sits against a wall, like a prep table for example, then you’ve got to pull it away from the wall and clean underneath. Let me tell you, stuff can pile up under there. And if you don’t clean up under there, and I mean regularly, it can get bad fast.

-Under shelves-whether it’s in the dining area, the back of the house, or in the walk-in refrigerators, you’ve got to clean under your shelves. Like with equipment, food, paper, and other garbage can settle, and if it settles too long, then that’s no good for you. And remember, garbage means bacteria and that means illness, and that’s no good.

So keep your whole restaurant clean, even the areas you wouldn’t think about. And keep getting that good food going!
