I’ve told you guys before: I’m a huge believer in alcohol beverage can be enjoyed for their taste and it’s better to take that approach rather than going for getting people drunk. Well, now we’ve got numbers to make the point. First off, remember that spirits are your source for the most profit in your bar. They are typically less expensive to buy (per bottle) than kegs or bottles of beer, and if served properly, you’ll get the most profit. And here’s your point to remember:
Let’s say that a single ounce of a spirit costs 70 cents. When you throw in the mixer, the fixed costs, that drink may cost four-five dollars. So 70 cents of that is your cost of the liquor. If your bartender pours half an ounce more, that means they are giving away 35 cents with every drink. If you have a bar that sees 300 people per night (which is a busy bar, but just as an example), and every person gets at least three drinks, that’s over $300 per night being lost, that can add up to over (make sure you’re sitting for this) $110,000 a year!
That $110,000 a year could go to a second location, several new employees, some equipment, and the possibilities are endless.
