This goes along with a recent survey conducted by the Culinary Visions Panel based out of Chicago. The survey found that “casual diners are more likely to order foods they are familiar with” even when offered choices they believe are healthier.
They presented over 200 consumers “invisibly” healthy menu items and asked them to rate them according to the chances they would order them off of the menu. The four items were based on real recipes for healthy menu items from casual dining establishments. Items included rabbi and lamb – both grilled and braised.
Both of these items were perceived to be healthy by the consumers, but they still went with steak with salsa verde and roasted squash. Over half of participants went with the steak.
So what does it all mean? I know when I go out to eat, even at a restaurant I’ve never been to, I always fall back on my old favorites – usually seafood or chicken-related dishes. I do this because I don’t want to spend money on food I might not like.
