Hiring and keeping good restaurant employees can be as tedious a task as deciding how to design your new industrial restaurant kitchen. As a former Italian restaurant owner I could go on and on about employee nightmares all day long. In fact, an entire book could be written about just one restaurant location.
But the one that takes the pizza pie is the kitchen prep cook that showed up to work high as the Empire State Building. Besides the prep cook actually telling me, the restaurant owner, that she’d just toked up on her way to work, this restaurant employee also thought I’d keep her in the kitchen using the meat slicers, pizza ovens, and fryers. It was the very first time, as a business owner that I actually lost my cool enough to fire somebody in the middle of the restaurant kitchen.
It’s a running joke in the restaurant business that if you drug tested every employee you’d have no restaurant employees… but showing up high. Not cool at all.
