Turns out, U.S. consumers hate waste. Coulda fooled me. Nearly 80 percent of U.S. diners concern about food waste in restaurants, according to a report by Unilever Food Solutions, which surveyed 4,000 diners in the United States, the United Kingdom, Germany, China, Russia, Poland, Brazil, and Turkey.
Food waste comprises about half of a restaurant’s waste stream and is the largest matter in landfills – a single restaurant in the United States can produce approximately 25,000 to 75,000 pounds of foodwaste in a year depending on the size of the establishment, according to the Green Restaurant Association. The World Menu Report findings also noted that 72 percent of consumers are concerned about the transparency of environmentally friendly disposal of food waste and 60 percent of consumers would like restaurant’s sustainable practices to be more transparent. Nearly hald of the surveyed U.S. diners say they would spend more for meals at restaurants and other foodservice operations that are clearly taking steps to limit food waste.
