Restaurants should still provide old favorites like pizza and sandwiches, but consumers are looking for novel approaches to these standards such as gourmet, artisan, and wood-fired. The article states that consumers will be looking for these kind of items instead of less-familiar dishes.

The article predicts that restaurants will reduce purchases of value-added items and focus on cheaper cuts, beans, and produce that will need more back-of-house preparation to cook into a homestyle meal. The article believes that the produce and other seasonal items will comes from more local sources such as growers, manufacturers, and distributors.

The article also discusses the influence of social networking, customers wanting more information, and discount resistance.
